MEDLEY OF SEAFISH: salmon in filo pastry, cod in prosciutto ham on ratatouille vegetables, king prawn Monkfish skewer timbale of fragrant rice.
ROASTED LOIN OF PORK STEAK on a tomato and aubergine gateau, apple sauce crackling, set on a red currant port wine sauce.
BRAISED LAMB SHANK on a creamy mash in a rich redcurrant sauce
CHICKEN BREAST on a plum tarte tartine with a tangy plum sauce
DUO OF GRESSINGHAM DUCK: crispy confit of duck leg and pan-fried breast with a morello cherry brandy sauce
